In brief, Community Supported Agriculture
is a direct partnership between you, the
consumer and us, the farmer.  By
subscribing at the beginning of the
growing season you hold a share of the
produce grown on our farm.  You choose
weekly or bi weekly delivery and it will be
delivered to a predetermined convenient
location and can also be picked up at the
farm.
Currently we have programs in the
Chelsea, Stockbridge, and Jackson area,
and are expanding as membership grows.  
Seriously considering Ann Arbor
as a pickup location for 2009!  Let

Shannon’s Favorite “Spaghetti”                

1 medium to large spaghetti squash                        
1 pound lean ground beef                                
1 teaspoon garlic powder
1 ½ tablespoons Italian seasoning
1 ½ cup mozzarella cheese                                
½ cup parmesan cheese                                 
1 jar spaghetti or tomato sauce
salt and pepper to taste

Cut spaghetti squash in half lengthwise, scoop out seeds and pulp; set aside.  
Brown ground beef until done.  Drain fat, rinse with hot water if desired.  In a bowl
add cooked burger and mix with 1 cup mozzarella and parmesan cheese while hot
(this will help burger stick together) then add seasonings.  Place squash cut side
up on cookie sheet; stuff cavity with meat mixture, and cover with foil.  Place in
oven at 375 degrees for 1 to 1 ½ hours until tender.  Uncover, top squash with
sauce, and sprinkle with remaining mozzarella.  Place back in oven about 5
minutes until sauce is heated and cheese is melted.  Let stand 5 minutes.  
Serves 4-6.

(Notes:  This works great with zucchini also, just reduce cooking time.
Experiment with different spices and amounts.  I usually put this together
with out measuring, tasting as I go.)
2 cucumbers, peeled and sliced into chunks                
4 large tomatoes, sliced into chunks
1 tablespoon sugar
½ cup thinly sliced red onion                                
1 tablespoon slivered fresh basil strips
½ cup extra virgin olive oil                                
1 tablespoon chopped parsley
¼ cup red wine vinegar
salt and pepper

Arrange cucumbers, tomatoes, and onions in a shallow
serving dish.  Mix oil, vinegar, and sugar in a small bowl
and pour over vegetables.  Season well with salt and
pepper. Cover and let marinate for at least 1 hour and up
to 4 hours.  Sprinkle with herbs just before serving.  (The
left over marinade makes a good dressing for salad.)  
Makes 6-8 servings.

Bushels of tomatoes (roma and regular), pickling
cucumbers, and corn are available.  Beans soon.

Brandywine (big ugly) tomatoes are available, best
sandwich tomato with awesome flavor!  We also have
crookneck squash, green and colored peppers, hot
peppers, misc. sweet peppers, pickling cucumbers,
salad cucumbers, beets, kohlrabi, cabbage, broccoli,
okra, fresh garlic,  eggplant, new red potatoes, and
tomatillas.  Some winter squash.  Fresh eggs.
Call to be put on the waiting list.  We will also have
beans in the early fall by the bushel.
